Hazelnut Dates And Chia Super Spread


1/2 Cup Hazelnuts
1/4 cup Cashews
2 tsp Cacao powder
4 madjool dates, pitted, places in warm water for about 20 minutes
pinch maca powder (optional)
1 tsp lucuma (optional)
15g melted cacao butter
Good pinch of salt
good pinch of cinnamon
1 tbsp chia seeds
2 tbsp activated buckwheat (optional)

In a food processor place the hazelnuts and cashews.
Process to a fine meal than continue processing until you reach an almost nut butter constancy where some of the oils have started to release. this might take a little while. make sure to stop every now and again to scrape the bowl and push the mixture back into the blades. (if it's taking to long or you can't seem to make the oils release don't worry once it's a bit pasty you can continue with the steps for the spread!)
Add madjool dates (reserve water!) cacao, salt, cinnamon, maca, and lucuma and process to combine. Add about 1 1/2 tbsp of the soaking water to slightly thin out the mixture (the chia will soak the moisture anyway). add melted cacao butter and process gently only until combined. Place the spread in a bowl and fold through chia and activated buckwheat (if using). Store in a jar in the fridge!

(note: the cacao butter and hardening of the oils in the nuts and the dates will make this mixture quite thick. if you want it more pliable to spread just place it outside of the fridge for 10-15 minutes before using:))
