Raspberry Baobab And Pistachio Truffles


1 cup Pistachios
1 cup Desiccated Coconut
4 tsp Rawsome Foods Baobab Powder
4 tsp Coconut Oil, Not Melted
1/4-1/3 cup Maple Syrup
1/2 cup Activated Buckwheat
1 1/2 tsp Lemon Zest
1/2 cup Snapped Dried Raspberries
2 tbsp Water
1 tsp Vanilla extract/bean/powder
Pinch Of Salt

Place pistachios, dessicated coconut, baobab and salt in a food processor and process to a fine meal. Add snap dried raspberries and process again to combine. Add the rest of the ingredients (start with 1/3 cup maple syrup and top off if you'd like it sweeter) and process to a sticky mixture. If sweet enough but not sticking add 1 tsp of water at a time. Roll and enjoy!:)

(I placed an extra pistachio in the middle of each of the truffles and coated it with ground pistachios, ground snap dried raspberries and desiccated coconut mixed with beetroot powder:))
