Raw Italian Boats With Fresh Herbs Cream And Bruschetta Tomatoes

Base:
3/4 cup almonds
1/3 cup brazil nuts
1/2 cup activated buckwheat
1/2 tsp super green powder (optional)
1 tsp onion powder
1 tsp Italian herbs
1/2 tsp garlic powder
1 1/2 tsp balsamic vinegar
3 tsp oilve oil
2 dates, pitted
1 1/2 tbsp tahini/almond butter
3 tsp hemp seeds
1/3 cup parsley
salt
pepper
chilli (optional)

in a food processor place nuts, buckwheat, spices, green powder, parsley and hemp and process to a fine meal. Add olive oil. balsamic, nut/seed butter and dates and process to combine. slowly drizzle water just until mixture stick together. state and adjust.

(I used silicon molds to create the "boat" you can also use muffin molds or anything the can create a "cavity" shape. If not using silicone make sure to place cling wrap on the mold before you place the mixture so that when it's set you can just lift it out of the mold:))

Place some of the mixture in the mold and start compacting it making sure to also compact it on the sides to create the "boats" while trying to make enough room on the middle for the cream and tomatoes. place in the fridge to set.

Fresh herb cream:

2 packed cups fresh coriander
1 cup spinach
1 cup parsley
small handful mint
1-2 tbsp hulled tahini
1 whole juice lemon, juiced
1/4 cup sunflower seeds
1 tbsp balsamic vinegar
1/2 tsp chilli flakes
salt
pepper
pinch of paprika

Add all ingredients to a powerful blender and blend until smooth.

Chop some ripe tomatoes and place in a bowl with a couple of chopped fresh garlic cloves, olive oil, lemon juice , balsamic, salt , pepper and fresh basil and and mix to coat.

Take the molds out of the fridge and unmold the base. Fill them with about a tsp of cream and top off with bruschetta salad and enjoy!
