Raw Falafels With Spiced Almond Dukkah

1 cup sunflower seeds
1 cup dessicated coconut
1/2 cup activated buckwheat
3 tbsp chia seeds
1 date pitted
3-4 tbsp lemon juice
2 tsp curry powder
1/2 tsp paprika
1 tsp onion powder
1/3 tsp garlic powder
1/3 tsp cumin powder
chilli/cayenne to taste
salt
pepper
water

Spiced Almond Dukkah

almond meal
onion powder
garlic powder
paprika
curry powder
salt
pepper


Place sunflower seeds, coconut and activated buckwheat in the food processor and process to a fine meal. Add the spices, chia, lemon juice and the date and process to combine. Add water very slowly (tbsp at a time) just until mixture is sticky and stays together when you roll it into a ball.

Dukkha-
Mix spices and almond meal together, taste and adjust.

Roll falafels in the dukkah and devour;)
