Vegan Tahini And Banana Bread

My train of thought: what if.... I put the vegan banana pancakes recipe in the oven in a tin.. add tahini, cacao powder and a couple of dates... Mmmm... Taaa Daa!:) delicious vegan tahini and banana bread! It was still a little gooey in the middle so I toasted it, smeared it with hulled tahini and savored every bite! Yum!:)


1 Cup buckwheat flour (or brown rice flour)
1 over ripe banana
2 flat tsp aluminum free baking powder
2 tbsp chia seed/ ground flax seed
vanilla
1/2 tsp cinnamon
good pinch of salt
1-2 tbsp hulled tahini
2 dates pitted
1 tsp cacao powder
about 1 1/3 cups coconut milk other nut milk or water

add all ingredients to the food processor and process to combine. line and grease loaf pan with coconut oil. add mixture and top off with chopped almonds and desiccated coconut. place in a preheated oven of 160c for about 20 minutes or until skewer comes out clean!

if still a little gooey on the inside you can slice it then toast it which makes it even better!

(this won't rise as much as a normal banana bread but would taste delicious non the less!;))
