Crunchy 3 Noodle Salad With Ginger and Fennel Dressing
This is SO refreshing and delicious, great as a hot summer day dish or a snack!
Plenty of fresh mint
Plenty of fresh coriander
Ginger and Fennel Dressing:
1/2 Lemon Juiced
1 tbsp Good quality olive oil
1 tbsp sweetener (agave, maple syrup etc)
1 tsp Freshly grated ginger
Chilli to taste
1-3 tbsp water
small handful chopped fresh fennel
Using a spirooli (or peeler) create noodles from the zucchini, cucumber and carrot. add mint and coriander and shaved almonds.
In a separate bowl mix together all the ingredients for the dressing except water. slowly add water one tablespoon at a time while mixing to combine and taste until desired flavor is reached (I love sour and so will use less water)
add to salad bowl and enjoy!
