Baobab And Pineapple Vegan Lassi

So yummy and refreshing and packed with beautifying, brain boosting ingredients it's the perfect drink on a beautiful hot summer's day!:)

1 can full fat coconut milk, chilled
1/4 cup coconut butter (not oil) (optional)
1 1/2 cups fresh pineapple
3 1/2 heaped tsp baobab powder
3 tbsp sweeter of choice (I used agave nectar)
1 frozen banana
1 vanilla bean, scraped/ 1 tsp vanilla extract
2 tbsp lemon juice
3 tbsp coconut oil, melted (optional)

Place coconut milk in the fridge for a couple of hours (the fat content will rise up while the water will stay at the bottom). place the creamy top in the blender with the rest of the ingredients except coconut oil and blend until smooth and combined. add coconut oil and blend again until perfectly combined and creamy. you might find that you need to let the blender work a little longer to incorporate everything to a truly smooth consistency as you'll have both cold ingredients and coconut oil that can seize and so just keep working the blender until beautifully smooth (don't be alarmed if it looks like it's "split" just let the blender work and it will slightly warm the ingredients and will bring it back together to a smooth consistency:)). You can also place in the fridge for 3-5 minutes for a more custard like consistency. (be aware that if you place it in the fridge for longer it might set into a thicker consistency depending on how firm or runny the fat content of the coconut milk top was to begin with coupled with the extra coconut butter and oil. if you find that the coconut milk top was very firm and you'd like it to stay on runnier side when left in the fridge skip adding extra coconut butter and oil)
