Raw Dairy Free Zucchini Pasta With Basil And Pistachio Pesto

Pesto:
1 1/2 cups fresh basil
1/2 cup fresh parsley
1/2 cup fresh arugula
2 tbsp good quality olive oil
1/2 small lemon juiced
1/3 cup Pistachios (I used activated, feel free to use raw, roasted or activated)
1 tbsp balsamic vinegar
1/2 tsp maple syrup
a few small leaves of mint (optional)
good pinch of salt
chilli
good pinch of cumin
2 tbsp water

Add all ingredients to a high speed blender and blend on high. If your blender has a wide base and this won't be enough mixture for it to beautifully combine you might like to double the recipe.
Taste and adjust!

Zucchini Pasta:
1 large zucchini or two smaller zucchinis
3 fresh tomatoes
Extra pistachios
Fresh parsley
(I didn't have any at the time but I really wanted to add avocado and olives to this as I thought it would be sensational!:))

Using a spirooli (this is the one I use http://goo.gl/AlJQLq) create angel hair pasta out of the zucchini.
Chop tomatoes and fresh parsley (and avocado and olives if using) and add to the bowl together with extra pistachios.
Coat the pasta with the beautiful pistachio pesto and enjoy every fresh delicious mouthful!
